In 2007 this was the begining of the Deli Delights journey, opening a Delicatessen
on the high street in Cardigan stocking a range of local, national and international
fine produce. In 2014 myself & my husband Tim Moved to the lovely Village of St Dogmaels and opened Deli Delights Delicatessen & Tea Room that was situated in the heart of the Village serving the finest food, teas and coffees to locals and visitors alike.
Having been there a while we decided it was time for a change of scenery and for me to expand my culinary repertoire and skill base, so I attended 'The Bertinet Kitchen Cooking School' in Bath. Under the tuition of great patisserie chefs such as Richard Bertinet, Ghalid Assyb, Will Torrent and Yolande Stanley where I enrolled initially on a Sugar, Chocolate & Croissant & Vienneisorie Course, this course was the first of many Bertinet courses I have attended to gain the knowledge and skills required to create wonderful professional pastries and chocolate. Vienneisorie, Introduction to Bread Making and Entremet traning followed shortly afterwards. These courses gave me great excitement, drive and determination to create the best delights I could for my customers. In 2016, I was pleased to announce the Mandy Wilcox of Deli Delights Introduction to Patisserie and Chocolate workshops and masterclasses , to share my skills and passion with people and create team building events showing how easy it can be to produce tasty and beautiful creations.
As well as developing my workshops I signed myself upto the Coleg Ceredigion in Cardigan in September 2016 where I completed a 34 week programme, learning lots of new skills and graduating in August 2017achieving a 'Diploma in Professional Cookery'. This was a great boost of confidence and filled me with inspiration of how I could use my new skills and develope new workshops, that were growing from strength to strength and creating a great customer base.
In March this year 2017 I was offered a job as a pastry chef teaching in a cookery school in Paris, unfortunately due to my commitments in the Uk I wasn't able to accept the position. However once returning home this inspired me to follow my dreams and set up my own school and I was given the opportunity of a property in Aberporth. This would be the perfect location for me just minutes walk from the beach allowing me to also accommodate the visitors visiting the local area. After 6 weeks of hard work painting and organizing in May 2017 I launched my first classes starting with a Children's monthly cookery workshop. Over the summer months I have been running a variety of workshops, Chocolate & Truffle making, Tapas, Introduction to Patisserie and Savoury Bakes. I continue to develop my learning and always creating new workshops for my client base.
I was also thrilled to have Mandy Walters of Cardigan Bay Fish in the Deli Delights kitchen, a fantastic workshop where she shared her skills and knowledge with us dressing crab and lobster. Myself and Mandy are currently working on new ideas for a joint workshop with us both next , so watch this space!
In August this year 2017 I was so privilaged to have in my own 'Deli Delights Kitchen', Yolande Stanley! Yolande was such an inspiration to me when I first went to Bertinet Kitchen that I always wanted to do more training with her, she kindly agreed to come to West Wales to tutor and mentor me. And wow what a fantastic couple of days learning new skills and she was as inspiring as ever!
I have lots of exciting ideas for 2018 and I'm currently talking with local producers in the area and will be arranging 'Foodie Experience and Tours'. These will be packages for Residential holidays and also day visits.
